Looking for a quick snack that’s easy to prepare and cheap? Crackers are usually hidden somewhere in the back of the pantry, and are often an under-appreciated food, never claiming the right as a star to their own dish. With a little dressing-up, the cracker can make a meal all its own. The following few options show that a little creativity can go a long way.
1. Cheese – Sometimes it’s best to stick with the basics. Got some cheese sitting around, not quite sure what to do with it? Smack some on a cracker and enjoy the energy boost.
2. Mini-Pizza – Shred a little mozzarella cheese, a pinch of pepper, a bit of tomato and a slice of pepperoni on a cracker, and pop the batch into the toaster oven. It’s like those Lunchables from elementary school, except it doesn’t taste like cardboard.
3. Vegetables – Extra sliced veggies from last night’s stir fry? Adding some crackers to greens like lettuce, zucchini, or cucumber with a dash of salad dressing adds a tasty crunch to a bite-sized salad.
4. Mini-sandwich – Build up a tower of turkey, salami, cheese, olives, mustard, mayo or any of your sandwich favorites and enjoy feeling like a giant when consuming a plethora of open-faced mini-clubs.
5. Dessert – Time to sweeten up that cracker. Most crackers are salted, adding that much more flavor to a delicious sweet topping. Break out the whipped cream, Nutella (my personal favorite), peanut butter, honey or all of the above and arrange to your liking. Chocolate chips are a must.
