As an active vegetarian in the community I feel that getting rid of Holy Cow at the EMU is a bad way to show your support of vegetarians and of local business. Replacing it with the Laughing Planet, while a great idea, is not the way we should be doing things.
Replace one of the chains inside the EMU such as Subway or Panda Express with Laughing Planet. Why not have two locally owned businesses in the EMU for students and the community. While Laughing Planet would be my choice above Subway it would not be my choice above Holy Cow as their menu is not as vegetarian as Holy Cow, although veggie-friendly.
In reading the news just a few weeks ago Market of Choice is expecting a rise in locally owned business. People want to buy local food, they want to eat what comes from our area. The college supporting the trend says that it supports the people and the local businesses as well. Sticking with what you know is going to be beneficial in the long run for you and your students.
