EMU Food Services has announced its decision not to renew Holy Cow’s lease when it expires June 30 this year. It has elected to replace Holy Cow with Laughing Planet Café.
Outside businesses were given the opportunity to bid on both the Holy Cow space and Subway space. A press release from the EMU says no inquiries were received regarding Subway’s space and the restaurant will remain.
Laughing Planet Café specializes in burritos and also offers bowls, quesadillas, soups, salads and smoothies. The company has a policy of using local and organically grown products “whenever possible.” Many offerings are vegetarian or vegan although the restaurant does serve hormone-free chicken.
Laughing Planet Café also has a strong recycling and composting program, which matches up with the EMU’s commitment to sustainability, the press release says.
Holy Cow has been a tenant in the EMU since the food court was created 10 years ago.
