Sometimes the best things in life are also the simplest. This recipe for sautéed sweet potatoes is a perfect snack or side dish. Don’t confuse this with your aunt’s mysterious Thanksgiving masterpiece—the vinegar and agave add so much flavor, it’s hard not to fall in love with this recipe.
Sautéed Sweet Potatoes
Ingredients:
1 sweet potato
1 tbsp balsamic vinegar
1 tbsp agave
2 tsp olive oil
Salt and pepper
Directions:
- Wash and peel sweet potato. Cut into 1 inch chunks.
- Pour olive oil in pan and add potato chunks. Turn on medium heat.
- Add agave and balsamic vinegar. Sautee until tender, stirring occasionally. Should take about 12-15 minutes. You can test the tenderness of the potato by puncturing it with a fork. It should be soft and easy to slice open.
- Put finished potato pieces in bowl and sprinkle with salt and pepper to taste. Enjoy!
