We, the members of the UO Service Employees International Union Executive Committee, want to appreciate the employees at Carson Hall food service who brought up the “suds in spuds” situation (“UO uses dishwasher on potatoes,” ODE July 11). We know that this concern had been brought up to management previously, but was ignored. The food service workers are highly skilled employees who work at a fast pace, cooking, serving and cleaning up after meals. We know the food service employees are overworked and understaffed. We know that because they are proud of their work and care about the students they serve, they could no longer let this go on without bringing this potato situation to public attention.
We thank them for their courage and integrity.
