I am a vegan student here at UO. I am sure you can understand the struggles I have at getting quick, healthy, good-tasting food between classes in or around campus. I recently moved here from Philadelphia. One of the reasons (no lie) I moved all the way across the country was how impressed I was at the University’s commitment to all lifestyles (including vegan). I read about Holy Cow months before I moved here and was very impressed with their options and food. At Syracuse, where I was an undergraduate, we did not have options like this on campus and the vegetarian/vegan community and health of the students were impacted negatively.
I have eaten at Laughing Planet. While it does have vegan options, they are typical ones – burritos and the like. I am sure that you are aware that a diverse diet is the healthy way to go (especially among persons with a dietary limitation). Having a diverse vegan/vegetarian option on campus is not only an asset to your current students but an asset to perspective students, as it was for me in my decision to attend UO.
Please reconsider Holy Cow’s lease.
