Since winter term often means more classes and less free time for a lot of students, you’ll want something quick and easy to make. Here are a few suggestions for getting through winter term with some delectable meals.
Chicken pot pie with biscuits
Ingredients:
- 2 cups chicken, cooked and chopped
- 15 oz. can mixed vegetables, drained
- 2 10 3/4 oz. cans cream of chicken soup
- 1 cup milk
- 10 oz. tube refrigerated biscuits
Directions:
- Combine first four ingredients together. Place in an non-greased 3-quart casserole dish.
- Bake at 400 degrees Fahrenheit for 20 minutes.
- While baking, slice biscuits into quarters and set aside.
- Remove casserole dish from oven and stir.
- Arrange biscuit pieces on top of the chicken mixture; bake until golden (about 15 minutes). Makes 6 servings.

Corn risotto
Ingredients:
- 2 cups fresh or frozen corn, thawed
- 4 cups chicken broth
- 4 tablespoons unsalted butter

- 1 cup Arborio rice
- 1/2 teaspoon fresh thyme leaves
- 1/4 cup grated Parmesan
- Kosher salt and black pepper
Directions
- In a food processor, puree 1 cup of the corn until smooth.
- In a saucepan, heat the chicken broth.
- In a large skillet, melt the butter. Add the shallot and cook until soft, about 2 minutes. Add the rice and cook, stirring, let cook for 3 minutes. Stir in 1 cup of the chicken broth and the pureed corn. Cook, stirring, until the rice has absorbed the liquid, for 5 to 7 minutes. Continue cooking with the remaining broth, adding 1 cup at a time.
- After the last cup of broth has been absorbed, let the risotto cook 3 minutes, stirring. Add the remaining cup of corn and thyme; cook 2 minutes more. Stir in the Parmesan and salt and black pepper to taste.
